1 pound lean ground beef

1 cup chopped onion

2 teaspoons crushed garlic

1 (14.5 ounce) can corn

1 (14.5 ounce) can diced tomatoes

1 teaspoon chili powder

or more to taste

1 teaspoon salt

1 cup cornmeal

3 cups tomato juice

1 (6 ounce) can small pitted black olives

1 cup shredded Cheddar cheese

Step 1

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.

Step 2

Cook and stir beef onion and garlic in a skillet over medium heat until beef is browned about 5 minutes. Stir in corn tomatoes chili powder and salt; simmer until flavors combine about 20 minutes. Stir in cornmeal. Add tomato juice and olives.

Step 3

Pour beef mixture into the prepared baking dish.

Step 4
