Vegetarian Greek Bell Pepper and Feta Bake Recipe

Ingredients

7 ounces feta cheese

cubed

3 red bell peppers

finely chopped

2 small onions

finely chopped

5 tablespoons extra-virgin olive oil

or more to taste

3 tablespoons tomato paste

3 cloves garlic

minced or pressed

1 teaspoon ground sweet paprika

or more to taste

1 pinch freshly ground black pepper to taste

Directions

Step 1

Preheat oven to 375 degrees F (190 degrees C).

Step 2

Combine feta cheese bell peppers onions olive oil tomato paste garlic ground paprika and pepper in a baking dish or casserole dish with a lid.

Step 3

Bake in the preheated oven until vegetables are soft and cheese is melted about 25 minutes. Remove lid and bake for an additional 5 minutes.
