Vegan Cashew Sour Cream

1 cup unsalted raw cashews
¼ cup water or as needed
2 teaspoons apple cider vinegar
¼ teaspoon salt
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
Side Dish Step 1 Place cashews in a bowl and cover with water. Soak until soft at least 4 hours but preferably overnight. Step 2 Drain and rinse cashews; place in the bowl of a food processor. Add apple cider vinegar salt garlic powder and onion powder. Blend until smooth and creamy occasionally scraping down bowl sides with a spatula 3 to 5 minutes.
