Colorful Summer Peach Salsa Recipe

Ingredients

2 fresh peaches

finely chopped

1 large cucumber

diced

1 Roma tomato

diced

or more to taste

½ red onion

diced

½ cup cream of coconut

¼ cup chopped fresh cilantro

1 tablespoon lime juice

1 teaspoon chili powder

or to taste

Directions

Step 1

Stir together peaches cucumber tomato red onion cream of coconut cilantro lime juice and chili powder in a large bowl. Place in the refrigerator until flavors combine about 1 to 2 hours. Serve at cool room temperature.
