Carrot Rice Loaf

Carrot Rice Loaf

Ingredients

2 cups water

1 cup uncooked brown rice

½ cup chopped onion

2 cups finely grated carrots

¼ cup peanut butter

3 slices whole wheat bread

crumbled

2 cups milk

salt and pepper to taste

Directions

Step 1

Bring water to boil in a medium pot; add rice. Reduce temperature to a simmer and cook for 25 to 30 minutes or until done.

Step 2

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

Step 3

In a medium size mixing bowl combine onions carrot cooked rice peanut butter bread milk salt and pepper. Place mixture in the prepared loaf pan.

Step 4

Bake for 45 minutes.
