Hearty Vegetarian Cashew Potatoes

Ingredients

4 cups cubed potatoes

1 (16 ounce) can diced tomatoes

¾ cup minced onion

3 tablespoons butter

1 ½ teaspoons minced garlic

½ teaspoon salt

1 ½ cups cashews

1 ½ ounces fresh spinach

1 ½ teaspoons red pepper flakes

1 cup shredded Cheddar cheese

¼ cup ranch dressing

¼ cup hot sauce

Directions

Step 1

Combine potatoes diced tomatoes onion butter garlic and salt in a stockpot; bring to a boil. Reduce heat cover and simmer stirring every 10 minutes for 25 minutes. Remove the lid and continue cooking for 10 minutes more.

Step 2

Stir cashews and spinach into potato mixture; cook until spinach is lightly wilted about 3 minutes.

Step 3

Transfer potato mixture to a serving dish; top with Cheddar cheese ranch dressing and hot sauce.
