5 tablespoons unsalted butter at room temperature

1 tablespoon dry sherry

5 celery ribs

cut into 2-inch pieces

Press Roquefort cheese through a sieve. Combine Roquefort cheese butter and sherry in a bowl and stir until smooth. Fill cheese mixture into a pastry bag with a star nozzle and fill celery pieces with cheese mixture.
