Mediterranean Pasta Salad

Ingredients

1 cup macaroni

2 ounces roasted red bell peppers

diced

¼ cup sliced black olives

¼ cup crumbled feta cheese

1 tablespoon olive oil

1 tablespoon minced garlic

1 teaspoon lemon juice

salt and pepper to taste

Directions

Step 1

In a small bowl or cup combine olive oil and chopped garlic. Set aside.

Step 2

Cook pasta in a large pot of boiling water until al dente. Drain.

Step 3

Transfer pasta to a medium mixing bowl and add roasted red peppers olives and feta cheese. Toss with olive oil mixture and lemon juice. Season with salt and pepper. Serve immediately.
