Mini Vegan Pizzas

Ingredients

1 (12 ounce) package English muffins

1 (14 ounce) jar pizza sauce

1 (6 ounce) can sliced black olives

1 (6 ounce) can mushrooms

1 tomato

chopped

1 red bell pepper

chopped

1 green bell pepper

chopped

1 (8 ounce) package shredded mozzarella-style vegan soy cheese

or to taste

Directions

Step 1

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

Step 2

Slice English muffins in half and toast in a toaster.

Step 3

Lay halved English muffins on the prepared baking sheet; spread 1 tablespoon pizza sauce on each. Sprinkle olives mushrooms tomato red bell pepper and green bell pepper onto muffins. Top with vegan cheese.

Step 4

Bake in the preheated oven until cheese is warm and melty about 10 minutes.
