Mint and Lemon Dressing

⅓ cup olive oil
2 tablespoons lemon juice
1 ½ tablespoons chopped fresh mint leaves
1 tablespoon chopped fresh mint leaves
Side Dish Step 1 Stir together olive oil lemon juice and 1 1/2 tablespoons of mint until well blended. Set aside for 2 hours. Step 2 Strain mint out of dressing with a fine mesh strainer. Stir in remaining 1 tablespoon chopped mint leaves and serve.
