Mini Sloppy Joes with Pulled Pork Recipe

Ingredients

2 tablespoons unsalted butter

1 cup finely chopped onion

⅔ cup finely chopped green bell pepper

1 cup beef stock

1 cup ketchup

1 tablespoon brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon whole-grain mustard

4 cloves garlic

minced

1 teaspoon chili powder

2 cups cooked pulled pork without sauce

3 dashes hot pepper sauce (such as Tabasco®)

or to taste

salt and ground black pepper to taste

10 mini Kaiser rolls

split and warmed

Step 1

Melt butter in a large nonstick skillet over medium heat. Add onion and bell pepper and cook stirring about 5 minutes. Add beef stock ketchup brown sugar Worcestershire sauce mustard garlic and chili powder; stir until well mixed.

Step 2

Mix in pulled pork until well combined. Season with hot sauce salt and pepper. Bring mixture to a boil reduce heat to low and allow to bubble gently until thickened and reduced 20 to 25 minutes.

Step 3

Place about 1/2 cup of the mixture on each sliced mini Kaiser roll and serve immediately.
