Alexa's Spicy Breakfast Potatoes

Ingredients

1 tablespoon butter

4 russet potatoes

scrubbed and cubed

3 yellow onions

diced

2 green bell peppers

diced

2 red bell peppers

diced

1 cup extra-virgin olive oil

3 tablespoons salt

or to taste

1 tablespoon paprika

or more to taste

1 tablespoon ground black pepper

Step 1

Preheat the oven to 400 degrees F (200 degrees C). Butter a rimmed sheet pan and place in the oven to preheat.

Combine potatoes onions and bell peppers in a bowl and toss with oil salt paprika and black pepper. Pour mixture onto the preheated sheet pan.
