Lemon Cinnamon Pancakes

Ingredients

3 tablespoons butter

melted

1 cup milk

1 egg

2 tablespoons honey

1 cup all-purpose flour

1 tablespoon ground cinnamon

1 lemon

halved

1 tablespoon confectioners' sugar

or to taste

Directions

Step 1

Melt butter in a large skillet over medium heat about 1 minute.

Step 2

Pour melted butter into a bowl. Add milk egg and honey; blend well. Stir in flour and cinnamon until batter is just combined.

Step 3

Drop spoonfuls of batter into the buttered skillet. Cook until bubbles form and the edges are dry 3 to 4 minutes. Flip and cook until browned on the other side 2 to 3 minutes. Repeat with remaining batter.

Step 4

Squeeze lemon juice over pancakes. Sprinkle confectioners' sugar on top.
