Spanish Rice in the Pressure Cooker

Ingredients

2 cups uncooked instant long-grain rice (such as Uncle Ben's®)

1 (14.5 ounce) can diced tomatoes with green chilies (such as RO*TEL®)

1 ¾ cups water

or more as needed

1 large onion

chopped

1 small green bell pepper

chopped

¼ cup salsa

1 ½ teaspoons garlic powder

½ teaspoon chili powder

or to taste

salt and pepper to taste

Directions

Step 1

Combine rice diced tomatoes water onion green bell pepper salsa garlic powder chili powder salt and pepper in a multi-functional pressure cooker. Close and lock the lid. Select the Rice function according to manufacturer's instructions; cook until rice is tender and flavors are blended about 10 minutes. Allow 10 to 15 minutes for pressure to build.

Step 2

Release pressure using the natural-release method according to manufacturer's instructions 10 to 40 minutes.
