Banana Fritters III

Ingredients

2 quarts oil for frying

1 cup all-purpose flour

1 ¼ teaspoons baking powder

¼ teaspoon salt

1 egg

beaten

2 cups milk

2 teaspoons canola oil

3 bananas

mashed

1 tablespoon lemon juice

2 tablespoons confectioners' sugar

Directions

Step 1

Heat oil in deep-fryer to 375 degrees F (190 degrees C).

Step 2

In a large bowl mix flour baking powder and salt.

Step 3

In a medium bowl mix egg milk and canola oil. Stir into the flour mixture. Mix in bananas and lemon juice. When thoroughly mixed form mixture into about 10 balls.

Step 4

In batches fry balls in the prepared oil 5 minutes or until lightly browned. Drain on paper towels and sprinkle with confectioners' sugar.
