Easy Mango Salad

Ingredients

2 firm green mangoes - peeled

pitted

and cut into matchsticks

¼ purple onion

thinly sliced

¼ red bell pepper

thinly sliced

3 sprigs cilantro

or more to taste

leaves removed and stems discarded

2 tablespoons lime juice

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon crushed peanuts

Step 1

Mix mangoes onion red bell pepper and cilantro leaves together in a bowl.

Step 2

Whisk lime juice fish sauce and brown sugar together in a separate bowl until the sugar is dissolved; pour over the mango mixture and toss to coat. Top salad with peanuts.
