Margarita Shrimp Fajitas

Ingredients

1 yellow onion

coarsely chopped

8 Key limes

juiced

1 (1.5 fluid ounce) jigger tequila

1 pound raw shrimp

peeled and deveined

2 green bell peppers

coarsely chopped

2 tablespoons chopped fresh cilantro

or to taste

1 teaspoon ground cayenne pepper

Step 1

Combine onion Key lime juice and tequila in a large skillet over high heat; saute until onion is translucent 3 to 5 minutes. Reduce heat to medium. Add shrimp green bell peppers cilantro and cayenne pepper; cover and simmer until shrimp turns bright pink about 7 minutes.
