Roasted Parmesan Rosemary Potatoes

Ingredients

1 ½ pounds new potatoes

cut into 1-inch pieces

3 tablespoons extra-virgin olive oil

2 tablespoons grated Parmesan cheese

1 tablespoon chopped fresh rosemary

salt and ground black pepper to taste

Directions

Step 1

Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.

Step 2

Mix potatoes olive oil Parmesan cheese and rosemary in a bowl. Season with salt and pepper. Spread potato mixture over prepared baking sheet.

Step 3

Bake in preheated oven until potatoes are golden brown and tender stirring once about 40 minutes.
