The local taco truck serves their chicken tacos with cabbage, cilantro and lime. This is my attempt to recreate their taco toppings.

½ small head cabbage

1 jalapeno pepper

seeded and minced

½ red onion

minced

1 carrot

chopped

1 tablespoon chopped fresh cilantro
