Hammin' Up The Waldorf Recipe

Ingredients

½ cup light mayonnaise

½ cup orange juice

2 cups diced cooked ham

2 Red Delicious apples

cored and diced

2 Golden Delicious apples

cored and diced

½ cup thinly sliced celery

1 tablespoon chopped fresh parsley

Fresh Fruit in Balsamic Pepper Syrup

Directions

Step 1

In a large bowl whisk together the mayonnaise and orange juice. Add ham red apples yellow apples and celery and toss until thoroughly coated to ensure that the apples do not brown. Chill 4 hours or overnight.

Step 2

Just before serving toss in parsley. Serve on a bed of lettuce. NOTE: You may also add 1/2 cup halved seedless grapes raisins sunflower seeds or walnut halves.
