Ingredients

½ ripe avocado

thinly sliced

½ ripe tomato

thinly sliced

4 thin slices cucumber

1 thin slice red onion

1 hoagie roll

split lengthwise

1 dash lemon juice

salt and ground black pepper to taste

1 leaf Romaine lettuce

1 teaspoon vegan mayonnaise (such as Veganaise®)

Step 1

Layer avocado tomato cucumber and red onion on the bottom half of the roll. Sprinkle with lemon juice salt and pepper. Place lettuce on top. Spread a thin layer of vegan mayonnaise onto the top half of the roll and place it on top of the sandwich.
