Healthier Bran Muffins

Ingredients

½ teaspoon salt

2 tablespoons packed brown sugar

1 ¼ cups all-purpose flour

1 tablespoon baking powder

1 ½ cups whole bran cereal

1 ½ cups vanilla soy milk

1 tablespoon olive oil

2 egg whites

Step 1

Preheat oven to 400 degrees F (200 degrees C).

Step 2

Sift together the salt sugar flour and baking powder in a large bowl. In a separate bowl combine the bran cereal and soy milk; allow to rest for 5 minutes before whisking in the olive oil and egg whites. Fold the dry ingredients into the wet. Spoon batter into muffin cups.

Step 3

Bake in preheated oven until lightly browned about 20 minutes.
