Oven Baked Parsley Red Potatoes

Ingredients

½ cup butter

cubed

2 pounds red potatoes

halved

1 tablespoon minced onion

or to taste

2 tablespoons minced fresh parsley

½ teaspoon salt

¼ teaspoon ground black pepper

Directions

Step 1

Preheat oven to 375 degrees F (190 degrees C). Place butter in a large baking dish and melt in preheating oven.

Step 2

Toss potatoes and onion in melted butter to coat.

Step 3

Bake in preheated oven until potatoes are tender about 40 minutes. Sprinkle parsley over potatoes and season with salt and pepper; toss.
