Spanish Rice (Microwave)

Ingredients

6 slices bacon

chopped

1 cup white rice

½ onion

chopped

1 (19 ounce) can whole peeled tomatoes

1 cup water

¼ cup diced green bell pepper

¼ cup ketchup

1 teaspoon salt

½ teaspoon chili powder

1 dash ground black pepper

Directions

Step 1

Place bacon in a microwave-safe 2-quart baking dish. Microwave until crisp about 6 minutes. Transfer bacon to a plate.

Step 2

Place rice and onion in the baking dish; microwave until slightly tender about 4 minutes. Add the cooked bacon tomatoes water green pepper ketchup salt chili powder and pepper. Cover and microwave for 10 minutes. Stir mixture and continue cooking until rice is tender and flavors are blended about 8 minutes more. Let cool briefly before serving.
