Ingredients

1 ½ pounds cabbage

coarsely chopped

1 small red bell pepper

chopped

1 onion

chopped

2 stalks celery

sliced

2 tablespoons seeded and minced jalapeno pepper

1 ½ teaspoons minced fresh ginger root

¼ cup crunchy peanut butter

3 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon white sugar

1 tablespoon dark sesame oil

1 teaspoon salt

½ cup chopped dry-roasted peanuts

Step 1

Toss cabbage red bell pepper onion celery jalapeno pepper and fresh ginger in a large salad bowl. Whisk peanut butter soy sauce lime juice sugar sesame oil and salt in a separate bowl until dressing is smooth. Pour dressing over slaw and toss to combine. Let stand at least 1 hour; serve sprinkled with chopped peanuts.
