Avocado-Turkey Rice Bowl Recipe

Ingredients

1 ¾ cups water

1 cup uncooked basmati rice

rinsed

2 cups cottage cheese

2 medium avocados

cut into bite-sized pieces

1 cup deli turkey meat

torn into bite-sized pieces

4 teaspoons lemon juice

4 teaspoons soy sauce

or to taste

8 multigrain crackers

salt and ground black pepper to taste

Directions

Step 1

Bring water and rice to a boil in a saucepan. Reduce heat to medium-low cover and simmer until rice is tender and water has been absorbed about 18 minutes. Remove saucepan from the heat and let sit covered at least 10 minutes.

Step 2

Arrange 1/2 cup cooked rice 1/2 cup cottage cheese 1/2 an avocado and 1/4 cup turkey side-by-side in an individual bowl. Repeat with remaining ingredients to create 4 bowls. Drizzle lemon juice and soy sauce over each bowl and garnish with 2 crackers. Season with salt and pepper.
