Easy Leftover Rotisserie Chicken Salad Recipe

Ingredients

8 ounces shredded rotisserie chicken

½ cup chopped pecans

1 apple

cored and chopped

10 seedless green grapes

quartered

1 cup mayonnaise

1 tablespoon low-fat vanilla yogurt

1 teaspoon Dijon mustard

1 teaspoon lemon juice

¼ teaspoon ground cumin

salt and ground black pepper to taste

Step 1

Place shredded chicken pecans apple and quartered grapes in a bowl. Stir.

Step 2

Mix mayonnaise yogurt mustard lemon juice cumin salt and pepper together in a small bowl. Pour over chicken mixture and toss to coat. Cover and refrigerate until chilled about 1 hour.
