Slow Cooker Mexican Pork Stew with Sweet Potatoes Recipe

1 (1 pound) lean boneless pork loin roast

cut into chunks

2 medium sweet potatoes

peeled and cubed

1 medium red onion

chopped

1 (14.5 ounce) can fire-roasted diced tomatoes

1 cup diced green chiles

½ cup chicken broth

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon ground black pepper

1 tablespoon lime juice

Step 1
